  • 2 pieces of pumpkin
  • 2 onions
  • 4 garlic cloves
  • 1 chicken stock cube
  • 20 cl whipping cream

Pumpkin soup

La recette
– Sweat the chopped onions, crushed garlic, pumpkins in the oven at 180°, cut into cubes (but not peeled), all on a baking sheet, without fat.
–Salt.
– Cook for 30 minutes.
– In the bowl of a blender or food processor, pour this mixture, add half a bunch of parsley, mix with the chicken stock.
– Then finish your emulsion with the whipping cream.
– Before serving, bring to a boil in a saucepan.
– Arrange in soup plates, then season with a drizzle of Emile Noël organic virgin linseed oil poured in a spiral over the soup.
– Garnish with a few sprigs of parsley and freshly ground pepper.
Astuteness
The oil is perfect for giving a nice décor, and even more flavor, to a simple soup. To get pretty pearls, put your oil in a bottle… All that’s left to do is draw the pattern.
