Lentil salad with orange

  • 200 g Le Puy green lentils
  • 1 bay leaf
  • 3 oranges
  • 6 tbsp. tablespoon olive oil

Lentil salad with orange

La recette

Cook the lentils in a large pot of salted water with the bay leaf for 20 minutes from boiling.

In the meantime, peel the oranges and cut them into not too thick slices, quartered.

Prepare the seasoning by emulsifying the mustard, shallot wine vinegar, salt and olive oil in a bowl.

In a salad bowl, combine the drained and cooled lentils, orange pieces, seasoning and spinach shoots.

Divide between 4 plates and serve at room temperature.
