  • 2 bunches green asparagus
  • 120 g butter, finely diced
  • 3 egg yolks
  • 2 tbsp. tablespoon water

Asparagus with hollandaise sauce

La recette

Cut off the hard part of the asparagus and steam for 12 minutes.

In a saucepan, mix the egg yolks with the lemon juice, water and salt. Whisk for 2 minutes over low heat.

Add the butter and lemon mustard. Continue cooking over low heat for 5 minutes, whisking constantly.

The hollandaise sauce should have the consistency of mayonnaise.

Serve the asparagus at room temperature with the warm hollandaise sauce.
