Pea waffles with fresh goat’s cheese and smoked salmon

La recette

– Cook the peas for 10 min in a small pan of boiling salted water.
– In a blender, blend the peas with two eggs to obtain a smooth purée.
– Add the remaining egg and the rest of the ingredients. Blend until smooth.
– Pour into a bowl.
– Heat the waffle iron. Ladle in the batter and cook the waffles for 3 to 4 minutes, depending on the appliance. For round shapes, do not fill the cells completely.
– Prepare the goat’s cheese by mixing it with the olive oil, salt and pepper.
– Spread the seasoned cheese over the waffles. Add a few peas for decoration, along with a slice of smoked salmon and sprouts.
