For the salad

  • 200 g bulgur
  • ½ cucumber
  • ½ bunch of radishes
  • 100 g spinach shoots

For the vinaigrette

  • 8 cl olive oil
  • 4 c lemon juice
  • Salt and pepper

La recette

– Start by blending the spinach shoots with the drained chickpeas, garlic, olive oil, salt and pepper in a food processor.
– Shape into small balls and bake for 15 min in an oven preheated to 180°C.
– Cut the cucumber into sticks, then the radishes into slices, while the bulgur cooks in boiling salted water for 10 min.
– Arrange the bulgur and vegetables in a bowl, then add the cooled falafels.
– Make the vinaigrette by mixing the olive oil, lemon, salt and pepper.
– Drizzle the dressing over the buddha bowl.
