  • 280 g grated carrots
  • 200 g fromage frais
  • 2 tbsp. teaspoon lemon juice
  • 2 tbsp. tablespoon powdered sugar

Carrot Cake with spices

La recette

– Preheat your oven to 180°C.
– Mix the flour, baking powder, spices and sugar in a bowl. Add the grapeseed oil and mix well. Add the grated carrots and mix well. Add the eggs one at a time, mixing well between each addition. Pour into a buttered cake tin.
– Bake for around 45 minutes, until the cake has puffed up. Insert a knife blade into the center of the cake to check for doneness. It should come out dry. Leave to cool before unmolding.
– Meanwhile, prepare the icing. In a bowl, combine the fromage frais, lemon juice and powdered sugar. Spread the mixture over the cooled cake with a spatula.
