  • 2 eggs
  • 10 cl full cream
  • 2 cloves black garlic
  • 5 cl milk
  • Fleur de sel
  • Ground pepper
  • Brown sugar

CREME BRULEE WITH BLACK GARLIC

La recette
  • Preheat oven to 100°c. Mix the cream and milk in a saucepan. Add 1 clove black garlic, crushing finely. Heat over medium heat.
  • Mix 2 egg yolks and 1 egg white in a bowl. Mix with a spatula to avoid incorporating air. Add to the still-warm milk. Mix and season with salt and pepper.
  • Pour the cream into 4 ramekins. Place the ramekins in the oven for 30 to 40 minutes. Let cool and set aside in the fridge.
  • Just before serving, sprinkle with a little brown sugar. Caramelize the top with a kitchen blowtorch. Finely dice the last clove of black garlic and place on the crèmes brûlées.
