Rustic cherry pie

La recette

Preheat oven to 200°C.

Prepare the dough. Mix the flour, almond powder, sugar, salt, IGP Lesvos olive oil and water in a bowl until smooth. Book now.

Prepare the garnish. Mix the almond powder, maple syrup and Lesvos PGI olive oil in a small bowl.

On a floured work surface, roll out the dough into a circle about 30 cm in diameter. Place on a baking sheet lined with baking parchment. Spread the almond powder mixture in the middle, then arrange the cherries in a heap on top.

Fold the pastry over the cherries. If the dough cracks, close the holes by pinching. Bake in the oven for 40 minutes.

Serve warm with heavy cream and a drizzle ofLesvos PGI olive oil.
