Liste des ingrédients

  • 2 zucchinis
  • 12 cherry tomatoes
  • 3 cloves black garlic
  • 200 g ricotta cheese
  • Olive oil
  • 1 pinch Espelette pepper
  • Salt
  • Ground pepper
  • 1 lemon
  • 1 puff pastry


La recette

Preheat oven to 180°c. Wash tomatoes and zucchinis. Halve the cherry tomatoes and slice the zucchinis with a mandolin.

Finely slice 2 cloves of black garlic.

In a bowl, crush 1 clove of black garlic into the ricotta. Mix with a drizzle of olive oil

  • and lemon juice. Season with Espelette pepper.

Roll out the puff pastry on a baking sheet. Spread out the ricotta/black garlic mixture, leaving

  • a 2cm margin all around the dough.

Place the zucchini slices and cherry tomatoes on top. Drizzle with oil

  • olive oil. Fold the pastry over to form the edges of the tart. Season with a little salt.

Bake for 30 minutes. At the end of the baking time, or as soon as you come out of the oven, place the

  • slivers of black garlic.
