La recette

– Finely blend the shortbread cookies with the toasted pumpkin seed oil.
– Bring a pan of water to the boil. Carefully place the peaches on top and cook for 1 min. Then drain them and plunge them into a bowl of iced water.
– When they have cooled a little, peel them and cut the flesh into strips.
– In a bowl, mix the cottage cheese with the sugar.
– Divide half the shortbread mix between 4 small verrines, then add half the fromage blanc and peach slices. Repeat the process, adding a layer of shortbread, a layer of fromage blanc and the remaining peaches.
– If there’s any shortbread left over, you can sprinkle it over the verrines for decoration.
– Refrigerate until ready to serve.
