  • 3 c. tablespoon rosemary honey
  • 1 c. tablespoon brown sugar
  • 2 sprigs rosemary
  • 12 apricots
  • 25 g slivered almonds

Roasted apricots & fresh goat’s cheese

La recette

– Preheat oven to 180°C.
– Mix honey, sugar and 4 tablespoons oil. Season with salt and pepper, and add the whole sprigs of rosemary.
– Cut the apricots in half and prick 4 of them onto 6 wooden chopsticks.
– Place skewers on a baking tray lined with baking paper, and drizzle with the previous mixture. Bake for about 15 minutes.
– Brown the almonds in a dry frying pan.
– Place the roasted apricot skewers and fromage frais on a serving platter. Sprinkle with slivered almonds, a few oregano leaves and a drizzle ofolive oil.

Tip
Accompany this aperitif (or appetizer) with gluten-free crackers or toast, slices of sourdough bread, or breadsticks.
