For the softness

  • 3 eggs
  • 1 ewe’s milk yoghurt
  • 180 g coconut or wholemeal sugar
  • 240 g small spelt flour (or traditional white flour)
  • ½ sachet yeast
  • 1 pinch salt
  • Juice of ½ lemon
  • A dozen pieces of candied ginger
  • 130 g Emile Noël Baux de Provence olive oil

La recette

– Preheat oven to 180°C. Oil a cake tin.
– Whisk the eggs into an omelette.
– Add the yoghurt and whisk again.
– Pour in the oil and whisk again.
– Stir in the sugar and lemon juice, then the flour, baking powder and salt. Whisk again.
– Cut the candied ginger into small pieces and add to the mixture.
– Pour the mixture into the tin and bake for 35 minutes.
– Leave to cool.
– Prepare the glaze by whisking all the ingredients together. Drizzle over cake and serve.

Tip
At Christmas time, you can replace candied ginger with candied oranges.
