  • 800 g sweet potatoes
  • 1/2 teaspoon curry powder
  • 100 g baby spinach shoots
  • 1 mango
  • 400 g cherry tomatoes a few pumpkin seeds

Sweet potato buddha bowl

La recette

– Peel and slice the sweet potatoes.
– Place in a bowl with the olive oil and curry powder. Mix well.
– Place the slices on an ovenproof tray and bake for 30 min in an oven preheated to 180°C. They must be melting.
– Peel and dice the mango.
– Place a bed of spinach on 4 plates or bowls. Divide among the sweet potato slices, cherry tomatoes and diced mango.
– Sprinkle with a few pumpkin seeds. Add a pinch of salt and pepper and a generous drizzle of toasted pumpkin seed oil.
